So I have a set of data points dependent on 2 parameters, ie: f(x,y)=z I am trying to take this set of data I have and generate a single equation I can use for any x,y in the data set. I've taken similar sets of data and generated curves for single-variable data sets, but this last one eludes me.

Any ideas on how to accomplish this, or how I could otherwise get some function to generate an output for any two given inputs?

This is intended to go into a programming application

Your problem is called spatial regression. Can you tell us more about your data, or even give us a sample? – Emre Mar 8 '12 at 22:17
This question is much too general to have a well-defined answer. Without any knowledge of the expected form of the function or the type of data, there is nothing that can in general be sensibly programmed into a piece of software so it will do something reasonable. – Ben Crowell Mar 8 '12 at 23:33
